Using a combination of mathematics, layout tools, hammers, drills, hacksaws, plasma and laser beam cutting systems, computers, cutting, forming, seaming or welding machines, workers manipulate the material into the product desired. The maintenance sector includes preventive maintenance, repair, testing, balancing and sometimes certification of the installed systems. Items commonly fabricated and installed include HVAC systems, metal roofs, kitchen hoods, various flashings, gutters, decorative architectural features and many other items made of a variety of metals. It is an interesting and evolving field with exciting growth potential. The apprenticeship is an earn-while-you-learn program involving paid "full time" work and related classes.

They will learn how to assess the threat of contamination, prevention measures, and alternative responses to food safety and other concerns, such allergens. The course also presents other material critical to safety in the modern day professional kitchen, including Hazard Analysis Critical Control Point (HACCP) and active managerial control. A case study in the form of food safety inspection and audit of the cafeteria and culinary classroom kitchen will give students a chance to see the difficulties that face food service operators every day.

Courses and certificates are designed to meet entry-level requirements for the level of work chosen and/or meet the requirements needed to obtain a California Child Development Permit to become an Assistant Teacher, Associate Teacher, Teacher, Master Teacher and/or Site Supervisor in state licensed, publicly funded, center-based child care and development programs.
